2021 Saltbird Cellars Chardonnay
This stainless steel fermented wine is true to what North Fork Chardonnay tastes like when it's in a pure form. It was slowly fermented in stainless steel at cool temperatures, with extensive sur lie treatment. This chardonnay is beautifully aromatic, light on alcohol, fresh with acidity, and mouth-coating. It is a wine that begs for North Fork-local cuisine — the acidity cuts through the fats and the full body can carry a lobster dish off your plate and onto your palate.
Chardonnay was slow-fermented in stainless steel at cool temperatures, with extensive sur lie treatment. We applied partial malo-lactic fermentation, followed by natural cold stabilization.
