Tasting Notes
This is a wine that just won't settle down. It evolves in your glass with the warm scent of lemon cookies and apple blossom with hints of jasmine. On the palate, there is the fatness of Meyer lemons and a coating of beeswax. The stainless steel fermentation maintains the citrus and apple blossom fragrance while the sur lie and partial malo-lactic fermentation provide richness on the palate. This is a wine best enjoyed on a beach eating steamed clams fresh off the grill dipped in lemon butter or salmon rillettes. Wine Advocate Score: 84 points
Process
Slow-fermented in stainless steel at cool temperatures, with extensive sur lie treatment. Partial malo-lactic fermentation is followed by natural cold stabilization.
