2021 As If "CURIOSITY" Pét-Nat

Tasting Notes
The wine is a purple-pink hue with copper undertones, with a nose of dried black cherry and blueberry. On the palate, light, fine bubbles, dry with notes of papaya, elderberry, currants, peppercorn, and green tea flavors. Relaxed acidity and a lightly creamy mouthfeel. 

Process
The grapes were picked at ripeness for red wine, but we pressed the fruit for a full-bodied rosé and transformed the juice into a petillant-naturel. We fermented it in stainless steel and then chilled down the juice towards the end of the ferment to halt the process. This allowed some setting before the final bottling, where it finished fermenting.

80% Petit Verdot, 20% Cabernet Sauvignon
