Tasting Notes
The aroma of lemon blossom, dried pineapple, and freshly cut ginger emanates from a glass of this 100% North Fork Sauvignon Blanc. Notes of apricot, white tea, and passionfruit are followed by a long, luscious finish thanks to its gentle, neutral oak aging sur lees.
Process
Slow fermented in neutral oak barrels with only natural temperature control and extensive sur lie treatment. A completely natural, malo-lactic fermentation followed by natural cold stabilization and light filtration. The wine is left on fermentation lees for 10 months only being racked shortly before bottling. The riper fruit and fermentation in neutral oak allow for the benefits of barrel fermentation kinetics to create a smooth and perfumed Sauvignon Blanc without the distraction of oak flavors.
