2017 BOE Cabernet Franc
Tasting Notes
With a purplish-red hue, our Cabernet Franc is both sophisticated and rustic. The bouquet flaunts a fresh raspberry jam, tart cherry, cranberry, fennel, allspice, nutmeg, and espresso. Its palate is lively on the tongue, making it an excellent wine for pairing with a meal. Soft tannins meld with a medium body, lingering pomegranate, and raspberry seed finish. The balance of fruit and acidity in this wine lends itself to a wide variety of food pairings – from coq au vin, seared tuna, and ratatouille, to turkey and ham, hard cheeses, autumn root vegetables, and wood-fired pizzas.
Process
The grapes were fermented partly in stainless steel tanks, and partly in an egg-shaped tank to promote soft tannins and a ripe fruit flavor profile. Manual punch-downs were conducted three times a day. The new wine was raised in new, second-year, and third-year French oak barrels, but only for nine months in order to accentuate and preserve its fruit-forward nature.
