2021 Saltbird Cellars Merlot

Tasting Notes
Saltbird Cellars Merlots are known for their dark berry flavors and smooth tannins, and the 2021 vintage proves no exception. Ripe blackberry and molasses greet the nose, followed by notes of sweet tabacco, dark plum, and black pepper. A little earthiness anchors the lusciousness of the wine, which rounds off with soft tannins.

Process
This Merlot is grown in a vineyard by the Peconic Bay. The intense dark fruits are a common trait at this particular vineyard site. Dark black Merlot berries are picked in mid-October and are allowed to cold soak before yeast inoculation. During some vintages, it kicks off with an indigenous ferment, but we always finish strong with yeasts specifically selected for Merlot.
