2021 As If Wines "Courage"
Tasting Notes
This wine is a intense medium pink in the glass with dried fig, violets and red licorice on the nose. On the palate, we taste red currants, wild cherry, cranberry and a touch of green tea. It's a dry and medium weight in the body, lively but mellow acidity that's an excellent match for meaty fish and grilled or roasted chicken and pork dishes. Dare to drink this rosé with real meals, and well beyond summer into winter, at that. Try it with tuna or swordfish steaks, grilled octopus, pork chops, hearty grain salads, full-flavored cheeses, and winter vegetables.
Process
We applied extended skin contact on Petit Verdot and Cabernet Sauvignon — which were pressed and co-fermented —for depth, color, and to intensify the red fruit and floral notes. Within the second lot, Merlot and Cabernet were sent directly to the press for a paler and lighter-bodied juice, adding acidity and fresh fruit notes. The final wine was constructed as a blend of these two lots. After blending, the wine was rested in stainless steel tank until bottling in early September 2021.
