Tasting Notes
A bold and age-worthy rosé with brooding flavors of crushed berries, pomegranate, fennel, rhubarb, and hibiscus flowers. It’s full-bodied, dry, and worthy of pairing with meals. Dare to drink this rosé with real meals, and well beyond summer into winter, at that. Try it with tuna or swordfish steaks, grilled octopus, pork chops, hearty grain salads, full-flavored cheeses, and winter vegetables.
Process
The Cabernet Franc was sourced from the Finger Lakes and picked specifically for producing rosé. The grapes were crushed and cold-soaked for 12 hours, and the resulting juice was wild-fermented in stainless steel. The Cabernet Sauvignon, Merlot, Syrah, and Petit Verdot were derived as a saignée bleed from red wine juices, combined together for co-fermentation in stainless steel as each varietal arrived in the cellar. The two wine lots were blended and finished together in stainless steel, and then bottled under a screwcap in September 2017.
