2019 BOE Cabernet Franc
Tasting Notes:
This wine greets the nose with cassis and braised cherry, similar to the fruit-forward profiles of Malbec and Barbera. We taste bright red fruits on the palate — strawberry, raspberry, pomegranate, and fresh currants. This lively wine has a backbone of espresso and cacao, framed by delicate tannins and lightly handed oak.
Process:
The 2019 vintage was a dream, with warm and dry September days leading into a mild and gentle October. These ripening conditions were quite favorable for Cabernet Franc, and it shows in the ripe flavors and soft tannins of this 100% cuvée. Fermentation was executed in an egg-shaped tank and in open bins, with manual punch downs three times a day. Following malolactic fermentation, the wine was sent to mature for 12 months in second and third-year French oak barrels.
