Tasting Notes
A lush bouquet of Gala apple, citrus, starfruit, melons, and botanicals, with a creamy mid-palate, clean acidity, and mild toastiness. It’s a mouthful of crispness layered underneath an ever-shifting medley of traditional and exotic fruit. Serendipity isn’t shy, but it will take its time to reveal itself over 5 to 8 years.
Pairing Notes
Catch Serendipity: we like to recommend that one play with pairings with this blend. It’s crisp, so try it with shellfish and your favorite salads. It’s creamy, so try it with poultries and pasta entrees. It’s floral and fruity, so try it with cheeses – especially those lovely gooey ones!
Process
Two barrels each of Chardonnay, Viognier, and Sauvignon Blanc were fermented in neutral French oak. Subsequently each varietal was stirred on the lees in barrel for two months, and then racked, blended, and returned to barrel for future aging for another five months. Another 10% of Chardonnay aged in 2-year French oak barrel was added at the final blending; the wine was then bottled under screwcap in September 2015.
