Tasting Notes
On the first sniff, there is a tangle of wintergreen and freshly baked croissants. The barrel fermentation & sur lie treatment created a wine with a big mouth feel and fresh acidity that cuts straight through to kefir & yellow passion fruit leaving a smooth yet mouthwatering finish. The fermentation process maintains the freshness of the aromatics with the added benefit of a rich mid-palate and softer acidities. This wine will complement lighter proteins and rich pasta dishes. Some of our favorite pairings are roasted herbed chicken or butternut squash ravioli drowned in Pecorino Sage butter.
Process
Slow fermented in neutral oak barrels with only natural temperature control, and extensive sur lie treatment. Complete natural, malo-lactic fermentation followed by natural cold stabilization and light filtration. The wine is left on fermentation lees for 10 months only being racked shortly before bottling. The riper fruit and fermentation in neutral oak allow for the benefits of barrel fermentation kinetics to create a smooth and perfumed Sauvignon Blanc without the distraction of oak flavors.
