2019 Saltbird Cellars Sauvignon Blanc
Tasting Notes
This tropical, unoaked Sauvignon Blanc is lean and sophisticated, but also fun the scent of honeydew melon and summer rain leads to fresh papaya, lemongrass, and pink pineapple. The natural acidity of the Sauvignon Blanc combined with a fat tropical mid-palate lends this lean beauty to pair with deep water Peconic Bay oysters. This local culinary pairing is becoming a staple at summer raw bars. A dollop of melted butter with a few drops of lemon juice is the perfect match for this wine.
Process
The fruit was left on the vine until early October to allow the fruit to reach flavors of riper melon & tropical flavors. Slowly fermented in stainless steel at cool temperatures to maintain the naturally high acidity, a slow fermentation results in a fat mid-palate with a fresh finish.
